Pitaya Chia Recipe

Ingredients

  • One and a half cup coconut milk*,
  • ½ cup chia seeds,
  • tbsp pitaya powder
  • tbsp coconut oil,
  • tsp vanilla,
  • pinch salt.
  • Dates

Method

Lets brighten it up!

Blend your milk with tsp vanilla, tbsp pitaya powder pinch salt and tbsp. coconut oil. And sweeten to taste with dates

To make the chia add ½ cup chia seeds to the flavoured coconut  and whisk every so often for half an hour.

Once chia is reasonably thick layer with coconut yoghurt raspberry jam ** and fresh fruit. Enjoy straight away or

refrigerate for up to one day.

*coconut Milk:

Make coconut milk by soaking one cup coconut chips in two cups of water. Leave for two hours.

When ready blend very well and strain using a nut milk bag.

** Raspberry jam. One cup raspberries squashed with tbsp milled chia seeds
